The soybean (Glycine max) is a species of legume native to Eastern Asia. It is rich in protein and oil. And has found use in various industries and commercial applications. It is utilized in the production of vegetable oil; animal feeds, soy concentrate and soy protein isolate, infant formula, many dairy product substitutes (soy milk, margarine, soy ice cream, soy yogurt, soy cheese and soy cream cheese). Other products include oils, soap, cosmetics, resins, plastics, inks, crayons, solvents, and clothing. And quite amazingly, Soybean oil is the primary source of biodiesel in the United States, accounting for 80% of domestic biodiesel production. Soybeans have also been used since 2001 as fermenting stock in the manufacture of a brand of vodka.
